This is what the biosphere tastes like

The biosphere dish is a culinary offering of special regional quality. Through the collaboration of gastronomy, traditional food artisans and agriculture, it represents genuine origins from the biosphere region. With this culinary offering, local restaurateurs, with the support of the Biosphere Region’s Administrative Office, are strengthening sustainable and regional value chains. They are taking on responsibility for preserving and developing this unique region.

Regionally unique

As a guest, you can taste regional uniqueness – in every biosphere dish. In this case, regional means that the main ingredient or the ingredient that gives the dish its name comes from the biosphere region. In addition, at least one of the side dishes should also be of regional origin, if possible and seasonally available. In this way, every biosphere dish contains the diversity of the Berchtesgadener Land. This is what the restaurateurs and the supplying farmers and the traditional food crafts of the region stand for.

Transparency and quality – from the farm to the plate

A wide variety of high-quality foods and culinary delicacies are produced right outside the kitchen door of local restaurants, which impress with their high quality and freshness and are a real asset to the menu. The cattle on the alpine meadows and pastures in the biosphere region, old fruit and grain varieties and much more – the region’s food processing companies have a wealth of resources to choose from. Restaurateurs share their love and passion for good regional products with their suppliers from the biosphere region.

Culinary Weeks – a celebration of biosphere dishes

November 4 to 17, 2024

From November 4th to 17th, 2024, a total of seven inns and butchers from the Berchtesgadener Land region will be offering specialties made from Surtal pasture-fed beef. The campaign is not only intended to promote high-quality meat from pasture-fed cattle, but also to convey the added value of conscious meat consumption with regard to species-appropriate animal husbandry, sustainable agriculture and the preservation of species-rich cultural landscapes in an enjoyable way. The “Surtal Pasture-Fed Beef Culinary Weeks” offer the opportunity to enjoy dishes of particularly regional and sustainable quality. The dishes with Surtal pasture-fed beef offered in the participating inns meet the criteria for biosphere dishes and are of course all about species-appropriate pasture-fed cattle. For two weeks, Surtal pasture-fed meat will be the focus in a total of four inns in the region. The menus of the participating inns feature a very special offer with Surtal pasture-fed meat in a wide variety of variations.
